Creamy Tomato Pasta
20min · 4 servings Serves 4 • 500g pasta of choice • 2 tbsp olive oil • 1 onion, roughly chopped • 5 cloves garlic, finely chopped • 3 tbsp tomato paste • 400ml can of coconut milk or cream 1/4 cup vegan parmesan or nutritional yeast Pre cook your pasta, drain and set aside. Make the sauce by adding the onion garlic and olive oil to a pan. Sauté for 2-3 minutes until the onion is soft. Add the tomato paste and coconut milk. Stir for a few minutes and the sauce should begin to thicken. Add the parmesan and stir again. Tip in the pasta and stir to cover the pasta in the sauce. Top with extra parmesan, salt, pepper and chilli flakes.
