Vegan Mashed Potatoes & Gravy
30min Ingredients: Gravy • 2 tbsp vegan butter (vegan butter can be swapped for a neutral oil or omitted entirely) • 4 tbsp cornstarch • 1 tbsp dried porcini mushroom powder • ½ tbsp tamari • 1 tsp garlic powder • 1 tsp onion powder • 2 cups vegetable stock • ¼ cup oat milk (optional)(or other plant-based milk) Mashed Potatoes • 4 cups peeled and roughly chopped potatoes • 1.5 cups oat milk (or other plant-based milk) • ½ cup vegan butter • 1 tsp nutmeg • salt & pepper to taste Instructions: GRAVY: On medium-high heat, add the butter, cornstarch, porcini mushroom powder, garlic and onion powder to a saucepan and stir until the butter has melted. Slowly incorporate the vegetable stock, and stir vigorously to remove any clumps. Bring to a boil until the gravy thickens.
