You know by now that I use roasted garlic cloves in almost every recipe. They're very tasty and don't overpower the dish as raw garlic does. And they're so easy to make. I buy bulk pre-peeled garlic to make things easier. I put it in a bread pan, cover it with olive oil, salt and pepper and roast for a while in the oven. I store it in the refrigerator for up to six months. The best part is that I use the leftover olive oil from the pan for so many other recipes - especially hummus. It's amazing!
