So, what’s the alternative? I simply use a chopper to finely chop radish and cauliflower instead of grating them. They turn out just as good 🙌 In fact, I also toss in some coriander leaves 🍃 and green chilies which get chopped perfectly along with the veggies vegetables. Believe me, the stuffing tastes exactly the same 😊 One common issue with mooli and gobhi parathas is that they tear easily while rolling due to their high water content. To prevent this, I add salt to the chopped veggies and let them sit for 5–10 minutes. Then, I squeeze out the excess water, which can be used for kneading the dough for paratha or later in curries, sambhar, etc. Another important tip: While preparing the stuffing, I add all the spices and carom seeds (ajwain), but I avoid adding salt at this stage. Instead, I mix in the salt only while rolling the parathas. This prevents the stuffing from releasing water and keeps the parathas intact. I hope you find these tips helpful!
