Adjust the spice and sourness to suit your taste. Ingredients: • ½ cup oil • 1 tsp jeera (cumin) seeds • 1 onion, finely diced • 1 tsp turmeric • 1 tbsp Kashmiri masala • 1 tbsp rombo rossi masala • 1 tbsp seafood masala • 3 kg crab, cleaned and cut from Seafood Market • 2-3 tbsp seedless black tamarind (soaked in water to form a paste, adjust to taste) • 8-10 green chilies (adjust to heat preference) • 8 cloves garlic (lightly crushed) • 1.5 kg jam tomatoes (grated or puréed) • 2 tbsp tomato paste • A stem of curry leaves • Few sprigs of coriander • Salt to taste Method: 1. Heat oil in a large flat pot over medium heat. Add jeera seeds and let them pop. 2. Add curry leaves and onions, sauté until translucent. 3. Stir in garlic and sauté for 30 seconds. 4. Add turmeric and masalas, stirring for another 30 seconds. 5. Mix in tomato paste and cook for a minute to enhance the depth of flavor. 6. Add tomatoes, chilies, and salt. Let it cook until it forms a thick chutney-like consistency. 7. Add tamarind paste and cook for another 5 minutes. 8. Add crab, stir well, and allow it to cook. 9. Remove from heat and let it rest for a while to thicken the gravy. 10. Garnish with coriander and serve with rice or bread.
