FRENCH APPLE CAKE cup + 1 tbsp all purpose flour tsp baking powder tsp salt 3 very large apples, peeled, cored and chopped into chunks 1 large eggs cup sugar 2 tbsp rum 1 tsp vanilla 1 stick butter, melted and cooled
clementine upside down cake: tsp brown sugar in sprayed muffin tin; top w/slice of clementine. add scoop of white cake batter. syrup: orange juice & sugar in saucepan to simmer until thickened. remove muffins onto wire rack & drizzle syrup.
