Traditional Tamales (Pork)

Traditional Tamales (Pork) Carnivores approve of pork and the sauce is authentic! I used a mix of guajillo and new mexico dry chile pods to get depth in sauce. Used a masa recipe found on a jalepeno & cheese tamale recipe.

My mom makes these and they are delicious! The difference is that we put sliced carrots and whole garlic cloves in each. We also put pork, chicken, and beef in each one rather than make them all pork. Also, add a sprig of cilantro to each!

It was my grandpa who walked into the room with a steaming hot plate in his hands. I…

Cheese Stuffed Arepas

I absolutely love Arepas but have only made them with my Colombian friends so I am excited to try this out!

Colombian Arepas from Food.com: Taken from epicurious .com and Originally published in Gourmet magazine - September 2007. "These tasty cornmeal cakes can be found grilled, baked, or fried in several Latin American countries. We love this Colombian version—the outside fries up crisp and golden, while the cheesy middle stays wonderfully moist. They can be eaten as a side dish or paired with hot chocolate for an afternoon snack."
