Barbacoa is by far my favorite taco, but is probably my all time favorite food in general. It is typically made with the meat from the head of the cow and is yummy with guacamole and a splash of lime and a dash of salt on a fresh corn tortilla.
Carnitas recipe: My Mexican husband says this is the best carnitas he has ever had. That is quite the endorsement since every other time it was made professionally. okay - so I don't have a Mexican husband!
