Fit Men Cook - Ingredients for 1 or 2 servings: 1 egg, 8 egg whites, 200g raw sweet potato (grated), 1/4 red bell pepper, 1/4 green bell pepper. Seasonings: sea salt, pepper, garlic & cumin. Depending on the size of your muffin pan, you can more or less than 6 frittata minis. Best thing about this recipe is that it is easy to adjust to meet your needs. Bake for about 15 minutes at 405F or until the egg is fully cooked.
