A healthy dinner is only minutes away!  In a large skillet melt 2 tsp of butter. Add in onions, squash, zucchini, cherry tomatoes. Let everything cook down for 5 minutes before adding in the cut turkey breast. Cook on med heat until turkey is done. Add salt and pepper to taste.  I cooked some jasmine rice to go along with mine. Makes for a great quick and easy meal, with enough left over for lunch the next day. ENJOY! :) #healthydinners #quickmeal #turkey #veggies #onepot

Thai Coconut Curry Soup - as my friend promised, this was very good! And, best of all, very easy to make.  It was missing a sweet quality that I can't put my finger on, but something that differentiates it from the Thai food place I frequent.  Who knows, maybe they simply add sugar to their recipe.  I used TJ's light canned coconut milk, so that kept the calories and fat content low in this.
