Must try:  Mexican Stuffed Poblano Peppers - these are SO good.  I added Rotisserie chicken to the stuffing mixture and i served with a mixture of avocado, diced tomato, cilantro, salt and pepper and a squeeze of lime juice.  They stayed together well and were SO yummy!
