A beautiful croissant filled with vegan egg, sausage, peppers, onions, cheese and tomatoes then baked to a perfect golden crunch.
Ingredients
• 4 Vegan friendly Croissants, we used the ones from Whole Foods
• 18-22oz of Vegan Egg Liquid, we used Just Egg
• 1/2 onion, diced
• 3-4 small sweet peppers, sliced
• 1 cup of sliced cherry tomatoes
• 7.4oz of Beyond Meat Breakfast sausage
• Garlic Salt
• Pepper
• 1-2 cups of Shredded Vegan Mozzarella
• Vegetable Oil
Green onions or chives, chopped
Directions
• Preheat oven to 375
• Heat a little oil in a non stick pan over medium high heat
• Add in your onion
• Saute for 2-3 minutes
• Add in your tomatoes and peppers
• Saute for 2-3 more minutes
• Add in your beyond sausage
• Cook on each side for 1 minut
