Cowboy Caviar- 2 cans black beans, drained rinsed 1 can yellow sweet corn, drained 5 Roma tomatoes, chopped 3 Avacados chopped 1/2 C purple onion, chopped 3 limes, juice Combine all ingredients, saving the Avacados until ready to serve. Mix with, Good Seasons Italian salad dressing, follow the pkt. directions. Prefer white vinegar and olive oil with the pkt. mix. Use approximately 1/2 cup to coat. Toss in Avacados prior to serving, stir and serve with Tostitos Scoop chips. #houseboatmeals
