Love this pancake recipe! Super high in protein = great post-workout breakfast :D Oatmeal pancakes: Ingredients: 1 cup old fashioned rolled oats 1/2 cup low- fat cottage cheese 2 large eggs 1 tsp vanilla extract 1 cup blueberries Cooking spray Directions: Combine all ingredients, except blueberries, and process until smooth. Stir in the blueberries (or reserve to add on top!). Cook like you’d cook a normal pancake.
