For centuries, humans have been harvesting honey in the wild using traditional methods that require skill, patience, and courage. 🍯 This time-honored practice not only produces some of the most delicious honey on the planet but also helps us appreciate the wonders of nature.

The Kattunayakan are tribal people who live deep in the forests of the Nilgiris Biosphere Reserve in South India. They collect and sell wild honey. Today, settlers from the crowded plains and eviction from the forest reserve threaten both their land and their traditions. *Mari Marcel Thekaekara* accompanied a group of Kattunayakan on one of their forays into the jungle.

The first time I picked up a piece of honeycomb from my local farmers market, I was definitely intimidated. Honestly, I think I was drawn to just how pretty it looks. But once I got home, I had no clue about what to do with it. So it sat in my pantry for months before I had the courage to go back to the beekeeper at the market and ask him for advice. As it turns out, there are a whole lot of delicious ways to use it in the kitchen.
