Here is the method and recipe to make your own pistachio paste out of whole pistachios. This recipe involves a light toasting to bring out a luxurious flavour.

Super rich and decadent, we are pretty aggressive with the salt in the pistachio paste. We lightly roast the pistachios on low heat and cool them down just before they start to catch color.   We do set the timer and temperature on the oven but we still have to make a manual check to make sure we are sport on.   Too much roasted and we loose the color, not enough and we have a slight raw taste to the pistachio paste.   Combine this with a rich vanilla infused cream for the white chocolate ganache where we infuse the vanilla warm at 50 C for several hours. Save for later ♥️

You can use any nut you like, this technique will ensure that each nut is caramelised. Use them as decoration, add a pinch of salt and eat them as a snack, bash them up and sprinkle onto a dessert or blend them in the high speed blender to make a praline paste.

1. Weigh your nuts, roast them (they will taste better if you take this extra step). E.g. 100g
2. Weigh half the amount of sugar to nuts E.g. 50g
3. Put the sugar in a pan with a little water, enough to slightly cover the sugar 
4. Heat the sugar and water until bubbling 
5. Tip in the nuts and stir stir stir
6. Eventually you’ll get these snowy looking nuts, you can use them at this point or
7. Continue stirring until the sugar caramelises
