How To: Smoked Ham

Step 1 - Buy the right ham. When choosing a ham, any cooked and cured ham will do. Shank portion, butt portion, loaf-style hams—they all work equally well. Please note, it's important not to use an uncured or fresh ham—preparing those properly is a more complicated, time-consuming process. Set up a parallel fire. How To: Bone-In Chicken Pieces

Step 3- Sear the chicken. Place the chicken thighs, drumsticks, wings & legs on the hot side of the grate, directly above the coals, starting with the largest dark-meat pieces first in the center of the coals. Sear all the chicken pieces for about two to three minutes per side, turning only once, until golden brown, making sure to not let the skin char. For leg pieces, give them a quarter turn every 90 seconds. If the grill flares up, temporarily move the chicken away from the coals.

How To: Pork Ribs

Step 1: Skin, season and rub. After rinsing the ribs in water and patting dry with a paper towel, remove the skin-like membrane located on the bottom or "bone side" of the ribs. Slide a dinner knife underneath the membrane between the bones at about the second or third bone from the end, then grab the membrane with a cloth and peel it off of the ribs.
