Strawberry Tarts with Lemon Zest Mix 8oz softened cream cheese & ¼c sugar. Mix in zest from 1 lemon & 1tsp vanilla. Spread mixture evenly in baked crusts (see blog for crust recipe). Arrange 2lbs halved strawberries on top. Heat 1/4c apricot preserves in a saucepan over med-low heat until liquid. Gently brush the strawberries with preserves, and let them set for at least 20 min. Chill the tartlettes in their pans for at least 1 hour. Remove them from pans just before serving.
