Fettuccine with Asparagus and Morel Mushrooms.  I substituted fresh thyme for tarragon and substituted green onions (bulb and leaves) and diced garlic cloves for the shallots.  Deglazing pan with white wine after cooking morels adds another dimension to your taste buds. Add back vegetables and allow wine to reduce by at least half before adding asparagus and vegetable stock.

These chips are so fantastic, and far healthier than the deep-fried variety.  I had these in Italy and couldn’t believe how tasty they were.  The rosemary salt can be kept for months in a little airtight jar and has a fantastic intense flavour which is also great with chicken, pork chops, etc.
