Carrot Cake from Food.com: Very delicious, Use carrot cake mix. walnuts instead of pecans. For a 2 layer cake: filling - 2 oz softened cream cheese; 4 oz drained pineapple, 1/4 cup chopped walnuts, 2 individual vanilla pudding cups, 1 tbls of milk. Mix the cream cheese until smooth add the other ingredients until well blended. Mixture is thick but easily spreadable. 8" x 3" Wilton Pan cooked for 75 minutes at 350 (check beginning 55-60 minutes, when it pulls away from the pan, it is done.)

For a Beach Themed bridal shower. I used two 8" round cake pans and baked the Classic White Duncan Hines Cake mix. I layered them after using a knife to level each cake. In between the layers I used a generous amount of the Wilton Buttercream Icing recipe. Then I iced the cake smooth. I used teal coloring here. Graham cracker crumbs made perfect sand, with a bit of sparkly sprinkles. The final touch was the candy seashells. I used Wilton's candy melts and a candy mold.

Pineapple Upside-Down Cupcakes from Food.com: Taken from the Duncan Hines website (credited to Stacy3099), these were a hit at our Thanksgiving gathering. Be forewarned; this made 24 regular sized cupcakes AND 12 mini cupcakes (<---the minis were ONLY batter: no pineapple, cherry, butter or brown sugar.) Mine baked for about 25 minutes, as I preheated the oven to 350, then dropped it to 325 after putting them in the oven! Enjoy!
