Mini Cheesy Corndogs....... :) One package of lil cheddar smokies. One box or bag of Pioneer baking mix. One package finely shredded cheddar. And extra long fancy toothpicks. Mix 1 cup baking mix, about 1/4 cup milk, and 1/4 cup shredded cheese. skewer a weinie with a toothpick and roll in batter. Deep fry until golden brown. Remove from fryer and place on a napkin. Sprinkle a little cheddar on top and let melt. Serve with ranch. Awesome!

Pumpkin Cream Cheese Roll- this is so good. I make it with pioneer baking mix 3/4 c. Pioneer buttermilk baking mix 3 eggs 1 c. sugar 2/3 c. canned solid pack pumpkin 1 c. chopped nuts 2 tsp. cinnamon 1 tsp. pumpkin pie spice Heat oven to 375 degrees. Grease a 15x10x1 jelly roll pan or a cookie sheet. Line sides and bottom with wax paper. Grease the paper.

PUMPKIN PANCAKES: Last week I found these and made them. I used Pioneer baking mix, just added 1/2 cup pumpkin, 1/2 TBSP vanilla, 1/2 TBSP Pumpkin Pie Spice, and a dash of cinnamon. They were the BEST pancakes I've ever had. Then I had leftovers the next morning. The pumpkin kept them so moist it was as if they were 100% fresh. One of my FAVORITE new recipes!
