Ingredients: 1 ½ cups mashed cooked sweet potato (about 2 medium) 4 large eggs ½ cup maple syrup or honey 1 tsp vanilla extract 1 tsp ground cinnamon ½ tsp ground ginger ¼ tsp ground nutmeg ¼ tsp salt 1 tbsp fresh grated ginger (optional for extra kick) ½ tsp baking soda ¾ cup almond flour ¼ cup coconut flour 2 tbsp coconut oil or butter, melted Optional toppings: Coconut whipped cream Chopped pecans or walnuts A drizzle of maple syrup Directions: Preheat oven to 350°F (175°C). Grease and line an 8-inch round or square cake pan with parchment paper. In a large bowl, whisk together mashed sweet potato, eggs, maple syrup, vanilla, spices, salt, and fresh ginger until smooth. Stir in baking soda, almond flour, and coconut flour until fully incorporated. Mix in melted coconut oil or butter. Pour batter into prepared pan and smooth the top.
